Cranberry Walnut Bread!


There's a restaurant in San Antonio called Paesano's and let me tell you... they make the BEST bread! All of them are good, but the cranberry walnut is my favorite. It's incredibly different from this one, not even close, but I have to give it a shout out because it inspired this recipe. I knew the cranberry and walnut flavors would work well and then I added in some cinnamon and vanilla. The original is crusty and not really all that sweet, but I was going for a breakfast/brunch vibe so this is what I came up with! I started with this Quick Bread Recipe to make sure the proportions of flour, sugar, baking powder, etc. were right, but then I added in the flavors that I wanted! 

What you need:
 1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
2 eggs 
1 cup milk
1/4 cup vegetable oil
1 tsp vanilla 
1 tsp cinnamon 
1 cup walnuts 
1 cup cranberries

Bread Pan and Pam or cooking spray

 Step 1: Spray your pan with non-stick cooking spray and preheat the oven to 350 degrees Fahrenheit.

Step 2: Combine all of the dry ingredients (flour, baking powder, sugar, cinnamon) into a bowl and mix them together.  

 Step 3: Combine all of the wet ingredients (milk, eggs, oil and vanilla) into a mixer or bowl and combine it all together. 

 Step 4: Mix the dry ingredients into mixing bowl while the KitchenAid is still mixing. Leave it until the two mixtures are completely combined.

 Step 5: Add in your walnuts.

 Step 6: Chop your cranberries into quarters until you fill a cup and add them to the mixer.

 Step 7: Mix up all of the batter until the walnuts and cranberry pieces are evenly distributed. 

 Step 8: Pour your batter into the bread pan and put it in the oven. Set the timer for 45 minutes. 
Check to make sure when you put knife in the middle that it comes out clean.

And voila! You have a tasty bread to serve on Christmas morning!

  1. So, I am confused. Is there supposed to be sugar in this? It is not listed on the ingredients but listed in the picture directions. I just followed the directions, but now I am worried that it needed sugar.

    1. I'm so sorry about that confusion. It's fine without the sugar because the sweetness comes from the vanilla and cranberries! The quick bread recipe is the base and it doesn't have any sugar in it! Enjoy!!
